Flourless Chocolate Cake

FLOURLESS CHOCOLATE CAKE Prep: 15-20 minutes Bake: 23-27 minutes Total: 1 hour 38-1 hour 47 minutes Yield: 8-12 servings Ingredients CAKE 1 cup semisweet or  bittersweet chocolate chips 1/2 cup (8 tablespoons) unsalted butter 3/4 cup granulated sugar 1/4 teaspoon salt 1 to 2 teaspoons  espresso powder , optional 1 teaspoon  vanilla extract , optional 3 large eggs 1/2 cup unsweetened cocoa powder,  Dutch-process cocoa  preferred GLAZE 1 cup semisweet or  bittersweet chocolate chips 1/2 cup heavy cream Instructions Preheat the oven to 375°F. Lightly grease an 8" round cake pan; cut a piece of parchment to fit, grease it, and lay it in the bottom of the pan.  See "tips," below. INGREDIENTS To prep the pan: 1 tbsp. Dutch-processed cocoa powder 1 tbsp. unsalted butter, melted For the cake: ½ cup boiling water 2 oz. bittersweet chocolate, chopped 2 cups (10 oz.) all-purpose flour ¾ cup (2¼ oz.) Dutch-processed cocoa powder 2 cups (8 oz.) confectioners’ sugar 1 tsp. salt 5 large eggs, at room temperature 1 tbsp. vanilla extract 1 cup (7 oz.) granulated sugar ¾ cup packed (5¼ oz.) light brown sugar 20 tbsp. Sweet Potato Sausage Balls

Active Time 30 Mins Total Time 1 Hour 30 Mins Yield 96 sausage balls Ingredients 2 pounds sausage, (1 lb hot and 1 lb sage) 4 1/2 cups all-purpose baking mix (such as Bisquick) 1 (16-oz.) pkg. pre-shredded extra-sharp Cheddar cheese 1 cup chilled mashed roasted sweet potato 1/4 teaspoon ground cinnamon 1/4 teaspoon kosher salt 12 tablespoons apricot jam   4 tablespoons Dijon mustard How to Make It Step 1 Preheat oven to 350°F. Lightly grease baking sheets. Step 2 Stir together sausage, baking mix, cheese, mashed sweet potato, cinnamon, and salt in a large bowl. Roll into 96 (1 1/2-inch) balls, and place about 1 inch apart on prepared baking sheets. Bake in preheated oven until sausage balls are cooked through and deep golden brown, about 20 minutes. Game Day Beer Chili

I first made this chili at Jackson's 1st Birthday Party! We had a pumpkin themed party on a rare 80 degree day in late October, and we served this chili and a pumpkin chili. I was sold on this right away and will keep on making it! It is delicious, thick, and so flavorful.  GAME DAY BEER CHILI yield:   SERBES 8 TO 10   total time:  2 HOURS INGREDIENTS: 2 tablespoons extra virgin olive oil 2 teaspoons coarse salt 1 teaspoon pepper 1 pound ground beef 1 pound ground italian sausage (or links, just removed from casing) 1 red onion, diced 1 red bell pepper, diced 1 orange bell pepper, diced 1 yellow bell pepper, diced 1 jalapeno pepper, diced 4 garlic cloves, minced 1 (6-ounce) can tomato paste 1/4 cup chili powder 1 tablespoon cumin 1 tablespoon dried oregano 2 teaspoons smoked paprika 1/4 teaspoon ground cinnamon 1/4 teaspoon dried chili flakes 1 (12-ounce) bottle of your favorite beer 1 (28-ounce can) crushed tomatoes 1 (14 ou...

Little Pizzas

These are a Christmas night tradition in the Peace family...going back decades! They freeze wonderfully and are great to pull out for a quick lunch after the holidays are over.  Little Pizzas 1 pound hot sausage, fried, drained and crumbled 1 cup onion, chopped 1/2 cup grated sharp cheese 1/2 cup shredded parmesan cheese 1-1/2 tsp. oregano 1 tsp. garlic salt 1 - 10 oz. jar of pizza quick sauce or: 6 oz. tomato paste 8 oz. tomato sauce 3 cans flaky biscuits (I buy baby Grands) Combine all ingredients except biscuits. Separate each biscuit into 3 rounds. Spread with mixture and place on cookie sheets. Freeze. After individually frozen place in Ziploc bags. Bake in preheated oven at 425 for 10 minutes. Yields ~ 90.
