Little Pizzas

These are a Christmas night tradition in the Peace family...going back decades! They freeze wonderfully and are great to pull out for a quick lunch after the holidays are over. 
Little Pizzas

 1 pound hot sausage, fried, drained and crumbled
1 cup onion, chopped
1/2 cup grated sharp cheese
1/2 cup shredded parmesan cheese
1-1/2 tsp. oregano
1 tsp. garlic salt
1 - 10 oz. jar of pizza quick sauce or:
6 oz. tomato paste
8 oz. tomato sauce
3 cans flaky biscuits (I buy baby Grands)

Combine all ingredients except biscuits. Separate each biscuit into 3 rounds. Spread with mixture and place on cookie sheets. Freeze. After individually frozen place in Ziploc bags.

Bake in preheated oven at 425 for 10 minutes. Yields ~ 90.

GLUTEN-FREE CHOCOLATE CHIP PUMPKIN BREAD PREP TIME 10 mins COOK TIME 50 mins TOTAL TIME 1 hour Author:  Leah Monica INGREDIENTS 1 cup pumpkin puree (not pumpkin pie filling) ½ cup sugar ¼ cup light brown sugar ½ cup melted coconut oil 2 eggs ½ t. vanilla extract 1½ cups  all-purpose gluten free flour blend  (+ ¾ t. Apple Peanut Butter Delights PREP TIME: 5 Minutes DIFFICULTY: Easy COOK TIME: 15 Minutes SERVINGS: 12 Servings INGREDIENTS 6 whole  Whole Wheat English Muffins, Split 1 cup  Creamy Peanut Butter 2 whole  Apples, Cut Into Thin Slices 1/2 cup  Sugar 2 teaspoons  Ground Cinnamon INSTRUCTIONS Preheat the oven to 350 degrees.  Spread each English muffin half with about 1 tablespoon peanut butter. Lay slices of apple on top, overlapping and stacking a few. Mix together the sugar and cinnamon, then sprinkle a teaspoon or two over each English muffin half.  Bake them for 10 minutes, then broil (watch them constantly!) until the top is nice and bubbly and starting to caramelize. (You can sprinkle on a little more cinnamon sugar after the initial 10 minutes of baking if you want to add a little more!) Allow to sit for 5 minutes, then serve!
