Sweet Potato Pudding

Grated Sweet Potato Pudding  (Elaine Peace) 2 Cups Grated Sweet Potato 1 cup sugar 3 eggs – beaten 1/8 teaspoon salt 1 cup coconut 1 teaspoon cinnamon 1 teaspoon vanilla 2 cups milk ¼ cup melted butter Mix all. Bake at 400 degrees for 40 minutes or until set. This was originally my Aunt Ellen’s recipe and prepared by everyone in my family for either Thanksgiving or Christmas.   My boys Love it.

Broccoli Bacon Salad (Elaine Peace)

This is typically on our Thanksgiving table! 3 Cups of Broccoli Flowerettes 1 Small Red Onion Thinly Sliced 12 Strips Bacon Cooked and Crumbled ½ cup Golden Raisins 1/2 Cup Sunflower Seeds 1 Cup Mayo ½ Cup Sugar 2 T Vinegar Dressing…. Whisk Dressing Ingredients together and toss with ingredients gently. Notes: Dressing is best prepped 8+ hours ahead of time. Salad is also best marinated in the dressing for at least 30 minutes before serving.

This recipe is a classic in my dad's family. My grandma almost always had a big pot of this for us to eat on over the course of our stay in the "valley" at our family's homeplace in Tazewell County, VA. There is something magical that happens in this soup...all the parts separated out are simple, but together you get something extra tasty and forever nostalgic. Great with any type of bread! FLOURLESS CHOCOLATE CAKE Prep: 15-20 minutes Bake: 23-27 minutes Total: 1 hour 38-1 hour 47 minutes Yield: 8-12 servings Ingredients CAKE 1 cup semisweet or  bittersweet chocolate chips 1/2 cup (8 tablespoons) unsalted butter 3/4 cup granulated sugar 1/4 teaspoon salt 1 to 2 teaspoons  espresso powder , optional 1 teaspoon  vanilla extract , optional 3 large eggs 1/2 cup unsweetened cocoa powder,  Dutch-process cocoa  preferred GLAZE 1 cup semisweet or  bittersweet chocolate chips 1/2 cup heavy cream Instructions Preheat the oven to 375°F. Dutch-processed cocoa powder 2 cups (8 oz.) confectioners’ sugar 1 tsp. salt 5 large eggs, at room temperature 1 tbsp. vanilla extract 1 cup (7 oz.) granulated sugar ¾ cup packed (5¼ oz.) light brown sugar 20 tbsp. Active Time 30 Mins Total Time 1 Hour 30 Mins Yield 96 sausage balls Ingredients 2 pounds sausage, (1 lb hot and 1 lb sage) 4 1/2 cups all-purpose baking mix (such as Bisquick) 1 (16-oz.) pkg. pre-shredded extra-sharp Cheddar cheese 1 cup chilled mashed roasted sweet potato 1/4 teaspoon ground cinnamon 1/4 teaspoon kosher salt 12 tablespoons apricot jam   4 tablespoons Dijon mustard How to Make It Step 1 Preheat oven to 350°F. Lightly grease baking sheets. Step 2 Stir together sausage, baking mix, cheese, mashed sweet potato, cinnamon, and salt in a large bowl. Roll into 96 (1 1/2-inch) balls, and place about 1 inch apart on prepared baking sheets. Bake in preheated oven until sausage balls are cooked through and deep golden brown, about 20 minutes.
